Our Flor bottling is derived from Sauvignon blanc harvested here in Mosier in 2014–though you wouldn’t know it now, and though Sauvignon’s not a traditional choice for Sherry making in Spain. But the process here was much the same, including fortification, an unusual second fermentation step, and long aging in a partially-filled barrel. A good Sherry invites you over an edge; it is transgressive. It selects for certain traits that are elsewhere flaws, and pushes them to extremes, where they become inexplicably attractive, as though now finally fulfilled. Dry and mesmerizing, such wines are far from ordinary.
